Special Treats

These special treats should not be consumed while you are rebooting. It is better to incorporate these tasty treats after you have maintained a healthy weight.

Julie’s Apple Strudel
SERVES 4
¼ cup apple juice
¾ teaspoon vanilla extract
1 teaspoon cinnamon
1 egg white
¼ cup vanilla soy, hemp, or almond milk
3 apples, peeled, cored, and chopped
¼ cup raisins, chopped
½ cup old-fashioned rolled oats or oatmeal flakes
Preheat the oven to 350 degrees. In a bowl, mix the apple juice, vanilla, cinnamon, egg white, and milk until combined. Stir in the apple, raisins, and oats. Pour into an 8-by-8-inch baking dish. Bake, uncovered, for 1 hour.

Yummy Banana Oat Bars
“2 cups quick-cooking rolled oats (not instant)
½ cup shredded coconut
½ cup raisins or chopped dates
¼ cup chopped walnuts
2 large, ripe bananas, mashed
¼ cup unsweetened applesauce (optional; see note)
1 tablespoon date sugar (optional; see note)
Preheat the oven to 350 degrees. Mix all the ingredients in a large bowl until well combined. Press into a 9-by-9-inch baking pan and bake for 30 minutes. Cool on a wire rack. When cool, cut into squares or bars.

Note: Add the applesauce and date sugar for sweeter, moister bars.
